In this workshop:
This workshop is designed for both coffee professionals and enthusiasts, helping attendees to build/improve their internal flavor catalog and better recall these flavors when analyzing coffee. The workshop is split into two parts, flavor exploration (the rainbow) and coffee assessment (the pot of gold).
During the flavor exploration phase, attendees taste different foods that are grouped according to color, systematically assessing each of these flavors. During the coffee assessment stage, students will apply their observations during the flavor exploration phase to a variety of different coffees.
In between the rainbow and the pot of gold, attendees will take part in a flavor reference identification game where they will blind taste references and try to identify their color, general category, and specific flavor.
Learning Objective:
- Help students understand the importance of developing our personal flavor catalogs so that we can be more effective at analyzing a coffee.
- Give students a method of analyzing flavor systematically in order to be able to better retain and recall flavors and to be more accurate in detecting flavors in coffee.
- Give students to taste according to color categories to help build color associations with flavors.
- Understand how to apply the flavor analysis to coffee and pull out flavors that can be found prepared coffee.
This class is lead by Trent Rollings.
Trent is an accredited Specialty Coffee Association trainer, certified World Coffee Competition judge, and have taught many classes and courses around the world. Rogue Wave Coffee have partnered up with Trent to bring world class workshops to Edmonton.
