Samuel Zavala is at the forefront of specialty coffee in Nicaragua. He is a young and innovative coffee producer that has separated himself from the pack by creating his own post-harvest processing protocols, which have elevated his award-winning coffees to be well recognized on an international level.

Nestled in the northern region of Nicaragua lies the lush and vibrant coffee-growing region of Nueva Segovia, home to some of the highest altitudes in the country, with coffee farms ranging from 1200 to 1800 meters above sea level. The eco-friendly cultivation process at El Cambalache aligns with their principles of social, economic, and environmental sustainability. The coffee plants are grown under the shade of various forest, fruit, and musaceae species, protected by low-intensity pesticides and nourished by both organic and synthetic fertilizers. Regular pruning is carried out to enhance the coffee plant’s structure, with proper management of shade for optimum sunlight penetration. The ripe coffee cherries are hand-picked, ensuring a premium selection of beans.
