Alessa Gesha Natural ASD Long (Lot GN-ASDL-Alessa-220121): The cherries are manually selected and cleaned, to make sure they are completely mature. Then they are fermented in tanks for 120 hours and then sun dried on African beds for approximately 25 days. Afterwards, the beans are placed in a temperature controlled warehouse for resting in grainpro bags.
Alessa Gesha washed (Lot Alessa-090321): One of their signature processes. After harvest, the cherry is placed in bags for 24 hours, afterwards it is pulped and washed in water by immersion until the mucilage separates from the bean. Later, the beans are pre dried on the floor and sun dried on African beds in a greenhouse at 1800 masl, until approx. 11% humidity is achieved. Afterwards, the beans are placed in temperature controlled warehouse for resting in grainpro bags.
These two coffees are named after Alessa, the granddaughter of Eugene (the founder of Altieri), and the daughter of Ximena Arias, who we work with at Altieri.
This coffee is best enjoyed between 7-45 days after roast date.
