Milton had this coffee go through an anaerobic fermentation of 72 hours in plastic bags inside special plastic tanks with water, to maintain a lower temperature, followed by a very slow drying phase in his marquesina (or raised beds) for almost a month, with one stal during this part in plastic bags, to give an extra complexity to the profile.

Shady and Alias Bayter worked with Don Milton to develop a special process for the Tabi variety on Don Milton's farm. An Anaerobic fermentation was induced for the first time, after a pre-fermentation on canvas, seeking to develop more complex flavors in the profile.
Tabi is a cross between Typica, Bourbon, and Timor Hybrid, developed by Cenicafe and introduced to Colombia farms in 2002 for its a resistance to leaf rust, good production yield, and high cup quality.
