Process: This CM Natural Indigo coffee is clean and refined due to a moderately extended fermentation. The aim was to create a clean Indigo profile that expresses a fruity flavour in the most clean and pristine way.

About this coffee:

This washing station is located at the Uraga Woreda close to the town of Dilla. The drive to the station highlights the “African massage” that locals love to joke about as you bounce around your 4WD driving along the mountain road. Perched on a ridge with a spectacular view of the surrounding mountains it’s a picturesque place to create magic with coffee, and that’s exactly what the team here do. Every lot that is delivered is meticulously sorted leaving perfect red cherries that are ideal for CM processing. We have been impressed by the quality of supernatural and honey lots from here in previous harvests and, for us, the CM Selections from Uraga this year are equally as impressive.
