Lactic Process: Natural Lactic - 24-60 Hours in cherry, and 120-160 hours in tank.
Fermentation: Elkin measure brix content of the coffee to determine when to harvest, once the cherries reach 20-24 Brix Sugar content (around 90% ripeness) then the coffee is harvested. The coffee are sterilized in a salt solution to create a biome conducive to lactobacillas bacteria for lactic fermentation. The cherreis under go 120-160 hours of dry fermentation and dehydration.
Drying: The cherries are dried on raised patio for 25 days.

Acetic Process: Natural Acetic
Fermentation: Elkin measure brix content of the coffee to determine when to harvest, once the cherries reach 20-24 Brix Sugar content (around 90% ripeness) then the coffee is harvested. The water in the fermentation thank is oxygenated to create a specific bacteria biome, in this case, acetic fermentation by acetobacter bacteria. Ripe cherries are placed into these 50 L tanks to ferment up to 290 hours to ensure adequete time for flavour development.
Drying: The cherries are dried on raised patio for 30 days.

About Catiope: Elkin got the CATIOPE seeds around 7 years ago from CeniCafe experimental stations in Timbio, Cauca deparment. He took interested of the Catiope due to its production capacity, the bean structure, and the tree structure. The origin of this coffee is a hybrid of Caturra and Ethiopia heirloom... hence the name Catiope. Elkin is impress with the cup quality and the productivity of this coffee since the first harvest.

Roasted for brewed coffee (filter or pour over) but can also be used for espresso.

Note: Normally we sell these coffee at $27/200g but we thought many of you would enjoy a smaller amount as a set.
