More about this coffee:

The Bayter Family farm is situated within the department of Tolima. It’s called El Vergel, meaning The Orchard in English. The soils are rich and nutrient, partially due to the location on an inactive volcano called Black Mountain. It’s a larger scale farm for Colombian standards, with a large focus placed on exotic varieties and new-age processing techniques. The primary goal for Shady and his family is to find distinction through their cup quality while also collaborating and supporting producers in their region. This lot has been sourced through Cofinet, a Colombian exporting company with an aligned vision to Shady. Great lengths and investments are taken to practice sustainable agriculture and to impact their environment at an absolute minimum.
This coffee comes from the lot managed by Marta Bayter, and the plot that is planted with only Red Bourbon. For this lot, Marta Employed the local women of the region to help pick and sort the cherries making sure only the best fruit made it into the final lot.

I met met Elias, Shady, and their lovely mom, Martha, at the World Coffee Championship in Milan, Nov 2021. It was a really wonderful experience as we shared our love for coffee. Since then I have met them again in many different coffee events. It is always a pleasure. - Ply
